You might think it’s life-ending because you can’t even eat the “tasty stuff” and have to stick-to bland health foods. In that case, you are mistaken. Pork chops and seasoned-rice…Your mouth watering yet?: First-up is yummy pork chops and rice. Round-up the following foods (none of which have any wheat allergy): one and a third cups cooked-rice, a can of gluten free (or wheat free) chicken soup or broth, six pork chops, and a cup of OJ. Next, get ready to shake and bake! On a flat baking-pan, evenly spread-out your rice. Then brown your pork chops, and use your cup of orange juice to cover the rice. Place your pork chops on top of your rice palette, cover it, and bake at 350 degrees for approxiamately 40 minutes. Take it out, inspect it and if needed-put it in for another 10 minutes. Then, enjoy.
Banana-Nut Muffins: Ahhh, and just when you thought bread was off limits for the sake of a wheat allergy-boom, some heavenly-delicious banana-nut muffins. Throw-on your chef’s hat and fire-up the oven to 350 degrees and get ready for some super muffins-without having to worry a spec about any wheat allergy. While you’re preheating, go ahead and round-up the following: one-fourth cup olive oil, crushed bananas and pears (about 2 apiece), a couple of eggs, and one-and-a-half cups of rice (or similar gluten-free) flour. Next, you’ll need a tablespoon of wheat-free baking powder, a tablespoon of crushed sunflower and/or almonds, a thumb-sized bit of bicarbonate soda, and a half-cup of rice milk. Finally, yes we’re close to the end, get a half-cup of dried coconut and you’re set. In a bowl, mix your eggs and olive oil until they are nice and fluffy. Add your banana/pear mix, your crushed sunflower and almonds, and baking powder to the mix. Next, stir in the rice milk and pour in the mixture evenly into a greased (CAUTION: a gluten-free grease or cooking spray) muffin pan, sprinkle a little cinnamon on top, and bake for about 25 minutes-or until firm and done.
Since you probably have a wheat allergy if you’re reading this, take extra caution when buying/picking-out ingredients. Even if the above ingredients do not explicitly say “gluten-free” on any ingredient, always make certain that it is, in fact, gluten-free (or wheat-free, same difference). This is only a very, very miniscule offering for those with a celiac disorder.
